Fanny’s Apple Cake

Rosh Hashanah is celebrated with sweet treats to symbolize hope for the sweet year ahead. Apples & honey, honey cake, and apple cake were always on our holiday table. My wife’s grandmother, Fanny Shenn, was a phenomenal baker and always made her recipes with the most important ingredient, love. Here is one of her many recipes that have been passed down through generations.

Ingredients

  • 5 c chopped apples
  • 2 c flour
  • 3 eggs
  • 1 t cinnamon
  • 1 ⅓ c sugar
  • 1 t baking soda
  • ½ c oil 1 t salt
  • Topping
  • ⅓ c sugar 1 t cinnamon
  • ⅓ c flour ½ stick margarine

Instructions

Mix eggs, sugar, and oil until creamy. Add flour mixture, add apples. Spread in a 13×9 inch ungreased pan. Blend topping of sugar, flour, cinnamon, and margarine and sprinkle evenly on top of cake. Bake at 375 degrees for 45 minutes.
