Sandy Rossio’s Rice Pudding


  • ½ c cooked rice
  • 2 T sugar  
  • Cinnamon, white raisins
  • 4 eggs
  • ½ c sugar
  • 2 t vanilla
  • 4 c milk


Cook rice.  Put in greased large Pyrex dish.  Add 2 T sugar, raisins & cinnamon to cover the bottom of the pan.  Flatten out.


Beat 4 eggs and add ½ c sugar, 2 t vanilla, and 4 c milk.  Pour over rice.  Don’t mix into the rice.  Set the dish in a baking pan with hot water coming up the dish about halfway.  Sprinkle more cinnamon on top.  Bake 350 degrees for about 1 hour.  Add more water if needed.
