Passover Mandel Bread


  • 2 T potato starch
  • ¾ c matzo cake meal
  • 2 T matzo meal
  • ¼ t salt
  • 2 t lemon juice
  • 2 t lemon zest
  • 3 eggs
  • ¾ c sugar
  • ½ c oil
  • 1 c chocolate chips


Sift the dry ingredients together. Beat the eggs. Add the sugar, juice, and oil. Beat well. Add the dry ingredients, zest, and chocolate chips. Let the dough rest for 20 minutes. Shape the dough into rolls. Place on a parchment paper lined sheet pan. Bake at 350° for 25-30 minutes. Allow the roll to cool. Slice the roll and sprinkle it with cinnamon and sugar. Put back into a 300° oven.
