Auntie Barbara’s Noodle Kugel
Ingredients
- 7 oz extra wide or wide egg noodles
- ½ c sugar
- ½ c raisins or dried cherries
- ¾ t cinnamon
- 2 eggs, well beaten
- ¼ c butter
- ½ t salt
Topping: - 3 c crushed cornflakes
- ¼-½ c butter, melted
- ¼-½ c brown sugar (to taste)
Instructions
Cook noodles as directed and drain completely. While cooking noodles, take a separate bowl and combine sugar, raisins, cinnamon, salt, and eggs. Melt butter and coat an 8×12” Pyrex dish.
Pour the excess butter into the other ingredients in the bowl. Mix well and pour into cooked pasta, stirring until all is coated. Crush cornflakes in a Ziploc until partially broken (not too fine) and mix in the brown sugar and butter. Bake in the center rack of a preheated oven at 375° for 50 minutes.
